An adaptation on the classic Portuguese dish "Bacalhau à Brás", normally made with Cod fish, but here replaced by tofu. It's so ridiculously easy to make, a kid could cook this. There's no secret ingredients and everything is easily found at any grocery shop. Annnd on top of that iy's ready in 15 minutes.
WHAT YOU NEED (serves 2)
250g of tofu, the softer ones are easier to break, but any will do
70g potato straws or shoestring potatoes (picture below)
1 handful black olives
1 white onion, diced
2 garlic cloves, diced
1 carrot, grated, this is optional but it ads more moist to the dish if you're feeling to lazy just skip it
Handful of chopped parsley
Olive oil to cook
Turmeric to add colour
Salt & Pepper to taste
HOW TO
In a big frying pan add lots of olive oil (sorry I'm not very precise) to cook onion and garlic. When they're transparent add the carrots (if you want) and cook a bit further. Then add the tofu and break it up in small piece with a spoon or fork. Add the turmeric, salt & pepper to your taste. Finally add the olives and potato straws, stir it well. Turn fire off, finalise with more olive oil and parsley. Easy peasy lunch is ready!
**this is a brand I find in Portugal but any brand at your local market will do
